Cider Glazed Sweet Potatoes

2lb Sweet Potatoes, Peeled, Medium Dice
2ea Shallots, Julienne
2T Butter
2T Brown Sugar
1C Apple, Small Dice
1C Apple Cider
1T Mint, Rough Chopped
1t Sea Salt


1. In a medium sized sauté pan add the sweet potatoes and butter. Cook over medium heat until potatoes begin to brown, stirring often.

2. Add the shallots and stir to incorporate.

3. Add remaining ingredients and cook until cider reduces to a syrup consistency.

Serve with your grilled pork chops.
