Blistered Green Bean Salad

2T Extra Virgin Olive Oil (EVOO)
8oz Green Beans, Trimmed
3ea Turnips, Small Dice
¼C Shallots, Sliced Thin
1lb Heirloom Tomatoes, Medium Dice
4oz Mixed Greens
¼C Parmesan Cheese, Shaved
2T Balsamic Vinegar
¼C Basil, Rough Chopped
Sea Salt & Black Pepper


1. In a large sauté pan over medium-high heat add EVOO, green beans, turnips and shallots. Cook until turnips begin to caramelize, stirring often. Season with salt and black pepper.

2. Place green bean mixture into a large mixing bowl.

3. Add remaining ingredients and gently toss to incorporate.
