Cucumber and Mint Salad

Prep Time: 20 mins, Serves: 4

2ea Cucumbers, Washed, Medium Diced
1ea Zucchini, Washed, Medium Diced
2ea Radishes, Sliced Thin
¼C Strawberries, Washed and Cut in Half
1ea Romaine, Washed and Chopped in ½ inch Pieces
3T Extra Virgin Olive Oil
2T Lemon Juice
1/4C Mint, Julienne
1/4C Basil, Julienne
Sea Salt & Black Pepper


1. Combine all ingredients in a medium sized salad bowl.

2. Season with sea salt and fresh black pepper.

3. Toss gently until fully incorporated.

Serve as an opening dish to an amazing cookout.
