Potato and Kale Hash

Cook time: 25 mins, Prep time: 20 mins, Serves: 4

Ingredients:
1T Extra Virgin Olive Oil (EVOO)
3C White Potatoes, Washed, Medium Dice
2ea Shallots, Peeled & Julienned
2T Butter
2ea Garlic Cloves, Rough Chopped
3oz Kale, Rinsed, Rough Chopped, Stems Removed
Salt & Black Pepper

Directions:

1. Heat a large skillet over medium-high heat.

2. Add EVOO, butter and potatoes. Allow potatoes to begin to brown; stirring occasionally to keep the potatoes from sticking.

3. Add the remaining ingredients and mix thoroughly. Continue to cook the hash until potatoes are tender.

4. Season with salt and fresh ground black pepper.

Serve alongside roasted chicken or pork.
